Oatmeal Cranberry Pancakes with Fruit
Awhile back we got a fancy-pants Vita-Mix which came with a book of vegetarian, vegan and raw recipes. This was one of the recipes from the book. The resulting pancakes were dense and flavorful. Very hearty.
Quorn Chick’n Patty with Thin Spaghetti, Homemade Tomato Sauce and Burnt Broccoli
Burnt broccoli was one of those happy kitchen accidents. Someone put broccoli into a dry pan over a high heat and wasn’t quite paying attention when the broccoli got all charred and seemingly burnt. Well, as it turned out, the broccoli ended up being quite tasty and since we’ve made a point to make broccoli this way. It’s a great side to a grain/protein meal like this pasta, sauce and Quorn patty.
Vegan Bun with Sauteed Tofu
Rice noodles with a ton of lettuce, bean sprouts, cucumber, carrot, cilantro, sauteed leeks, Thai basil, lime, peanuts and General Tso tofu with homemade vegan nuoc cham to be poured on top. One of my favorite meals.

African Peanut Stew with Kale and Brown Rice
This is one of my favorite recipes lately. It’s spicy and peanut-y and all around satisfying. We typically add some extra protein to it in the form of beans or tofu, and will use either kale or chard or whatever green we have on hand. It’s really a quite versatile recipe.
Vegan Mexican Tofu Scramble with Fresh Avocado and Sweet Potato Hash Browns
Tofu scrambles are one of my favorite things to make for weekend brunch, and they’re so easy too. We threw together a bunch of veggies that we had on hand, olives, some extra firm tofu, snutritional yeast, turmeric, cumin and topped with fresh avocado slices and some Daiya cheese. Some sweet potato hash browns on the side.
